Haji Zeynalabdin Taghiev was an Azerbaijani national industrial magnate who in addition to the various activities, also developed fish farming in the Caspian Sea. In 1898 in the Banka settlement, he establishes a fish farm, enterprise for the breeding of sturgeons and the production of superior-quality caviar, and names it after himself.
During the operating years of the farm the assortment of fish and caviar it produced became popular all over the world.
Another meaningful contribution to the Azeri caviar history was in 1936 when Aga Rza Rzayev from Salyan district was awarde was awarded with “hero of the labor” title for his invention of the «Azeri malossol caviar production technique».
The supreme qualities of Azerbaijani caviar originate from its unique location, vast alluvial delta formed by Kura River flowing into the Mingachevir reservoir and then into the Caspian sea. Along with the optimal warmness of the water on the southwestern shore and the particular type of sturgeon known for the best taste of caviar.
Shikar Ibrahimov the petroleum engineer, used to take the “black gold” as the Caspian caviar is called, with him on his frequent business trips around the world. The caviar was offered as a sign of friendship.
With time, it started to become a tradition that was highly supported and appreciated in countries all over the world due to an exquisite taste.
And to this day, Azerbaijani Caspian caviar uniqueness is a plexus of the nature with genuine spirit which is a synonymous of a superior quality.
